Job/Position DescriptionShift: Monday thru Sunday variable eight (8)hour shift between the hours of 5:00am thru 7:00pm. Flexibility in workhours may be required for this position. The hospitals providestate-of-the-art treatment that is recovery-oriented and science-based.Whether in a direct-care or support role, your contribution will make adifference in the life of a Texan.The Cook III performs routine(journey-level) food preparation work on a designated shift and rotationin the Central Kitchen under general supervision. Work involvespreparing, cooking, portioning, distributing and serving food forregular and therapeutic diets and textures. Follows prescribed menus,recipes and food handling standards and completes necessary reports.Maintains sufficient knowledge to satisfy the requirements of the job.Handles food in accordance with federal, state and HACCP guidelines.Follows kitchen and food service safety procedures and practices.Responsible for sanitation of equipment and work areas. In the absenceof the Cook IV, this position assumes oversight of the kitchen. Maytrain/oversee others in their work. May be required to work a variableschedule. Must be willing to work weekends and holidays. May workunusual or extended hours in the event of a disaster or operationalnecessity. Works under general supervision, with moderate latitude forthe use of initiative and independent judgment.Performs other duties asassigned. Other duties as assigned include but are not limited toactively participating and/or serving in a supporting role to meet theagencyand#146;s obligations for disaster response and/or recovery orContinuity of Operations (COOP) activation. Such participation mayrequire an alternate shift pattern assignment and/or location.EssentialJob Functions1. Attends work on a regular basis and may be required towork a specific shift schedule or, at times, even a rotating schedule,extended shift and/or overtime in accordance with agency leave policyand performs other duties as assigned.2. Prepares, seasons, cooks andassembles food for regular and modified diets using proper equipment andutensils in a manner that ensures sanitary conditions; prepares andportions food for special diets and modified textures following foodservice procedures in order to meet guidelines set forth by doctor'sorders; prepares scheduled snacks and supplements; maintains supply ofsnack items; follows Central Kitchen Operation Manual Procedures; andensures others follow proper food handling in accordance with foodservice procedures, state and federal guidelines. 3. Operates andmaintains all food service equipment in a safe manner. Providesguidance, training and oversight to others to operate and maintain foodservice equipment in a safe manner. 4.
