SUPERVISED BY: Kitchen Supervisor Location: Temple, TX JOB
SUMMARY: Prepares a wide variety of menu items for residents and visitors in a 42-bed residential living facility. Prepares and portions foods according to USDA-approved recipes and guidelines. Provides food for special dietary needs, as required. Ensures compliance with federal and state food safety regulations. Works independently within established procedures. Oversees daily kitchen operations including sanitization, food preparation, storage and inventory control. With the help of the Kitchen Supervisor, establishes new menus in accordance with federal food guidelines for approval by the Registered Dietician. Ensures dining room is clean and sanitary.
ESSENTIAL JOB FUNCTIONS:
Provides customers a pleasant dining experience
Serve meals by reviewing recipes; assembling, combining, and cooking ingredients in accordance with established menu plans
Execute cold food production in accordance with standards of plating guide specifications
Prepares ingredients by following recipes; slicing, cutting, chopping, mincing, stirring, whipping, mixing ingredients; adding seasonings and verifying taste
Complete hot meal preparation by grilling, sauting, roasting, frying, and broiling ingredients and assembling and refrigerating cold ingredients
Adheres to proper food handling, sanitation, and safety procedures; maintains temperature and Hazard Analysis Critical Control Point (HACCP) logs as required; maintains appropriate dating, labeling, and rotation of all food items
Stores leftovers according to established standards
Coordinates daily food supply inventory Submits order to supervisor.
Assist with receipt of deliveries.
Contributes to daily, holiday, and theme menus in collaboration with supervisor.
Ensures smooth operation of dining hall services during absence of supervisor.
Maintains cleanliness and sanitation of equipment, food storage, and work areas.
Completes cleaning according to daily and weekly schedules.
Instructs personnel in use of new equipment and cleaning methods and provide.
