Responsibilities This position will report to the Food and Beverage Manager, incumbent is responsible for the on-site management of the Fairway Café located at the MCAS Miramar Memorial Golf Course to include kitchen, food, and bar operations, and performance of routine management functions. Manage and oversee food, and bar operations in accordance with established policies, procedures, and guidelines to include monitoring daily operations, supervising kitchen and front of the house staff, and ordering food and supplies. May coordinate food and beverage special events. Forecast food and beverage requirements and coordinate with food, alcohol and supply vendors to manage the daily operational needs. During heavy service loads will be required to assist with food prep and/or cooking. Ensure food/bar service areas are maintained in a clean and sanitary condition. Prepare menus and establish selling prices to attain desired cost of goods and profit margin. Maintain cost cards. Make recommendations to supervisor of changes to facility policies, guidelines, and standard operating procedures to achieve objectives and improve operational effectiveness. Collect and assemble statistical data regarding past and current operations and maintenance expenditures to support recommendations. Review data and prepare short-range estimate of projected costs. May contact vendors for information and to negotiate foodstuff prices and selection. Participate in resolving a restaurant administrative and operational issues by assembling facts, evaluating information, and drafting reports that may be used as the basis for recommendations, interpretation, and decisions by higher-level management officials. Perform supervisory functions typical of a first-level supervisor. Directly supervise, counsel and train employees, assign schedules and direct work, appraise work performance, approve or disapprove leave and personnel actions. Participate in recruiting efforts, oversee hiring selection criteria, and onboard new employees. Must be alert to substance abuse and take appropriate action. Conduct safety meetings at least quarterly. Advise employees of available safety regulations, instructions, materials, and equipment. Promptly report workplace accidents to the Human Resources Office. Ensure safety training is provided to employees. Comply with OSHA standards and take action to correct unsafe or unhealthy working conditions. Ensure employees understand safety infractions that can result in disciplinary actions and follow through with appropriate action. Ensure minimal loss of duty by complying with ¿Return to Work¿ program initiatives and following up on employee well being. Perform other related duties as assigned. Requirements Conditions of Employment See Duties and Qualifications EVALUATIONS: Qualifications Three years' experience that demonstrates knowledge of the fundamental principles, methodology, and techniques involved in restaurant management and operations to include purchasing alcohol, food, and supplies, and performing related administrative business practices. Three years' experience supervising employees in accomplishment of work. Knowledge and skill to perform regular or periodic reviews/inspections of restaurant practices. Ability to evaluate the adequacy of facility activities and practices, and to prepare reports and recommendations concerning improvements or correction of deficiencies. This is a white-collar position where occasional lifting up to 20 lbs. may be required.
