POSITION SUMMARY

Essential Job Functions:

  1. Complete knowledge of

  2. All liquor brands, beers and non-alcoholic selections available in the Restaurant

  3. The particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.

  4. Designated glassware and garnishes for drinks

  5. All teas and coffees products : Service procedures

  6. All food and beverage products served in the Restaurant

  7. All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.

  8. Daily menu specials. 86’d items

  9. Daily house count, arrivals / departure, VIPs

  10. Scheduled in-house group activities, locations and times

  11. Maintain complete knowledge and strictly abide to local liquor laws, particular those prohibiting service to minor, intoxicated persons and drunk driving

  12. Maintain complete knowledge of correct maintenance and use if equipment only as intended

  13. Maintain complete knowledge and comply with all department policies/service procedures

  14. Obtain assigned bank and ensure accuracy of contracted monies. Obtain change required for expected business level. Keep bank secure at all times

  15. Obtain a security escort whenever transport bank to/from Bar, if required

  16. Obtain outlet’s key from security

  17. Complete opening side duties:

  18. Check quality and amount of all bar stock and supplies by using checklist

  19. Complete opening inventory sheet

  20. Requisite all necessary supplies

  21. Transport supplies from storeroom to the Restaurant

  22. Stock ice in bar

  23. Set up bottles in display cabinet and speed rail

  24. Prepare garnishes

  25. Stock glassware and paper supplies

  26. Set up ashtrays with matches

  27. Prepare mixes

  28. Check condition and cleanliness of blender, shaker and other tools

  29. Check temperature of refrigeration units and glass wash machine

  30. Change date on credit card imprinter at opening unit

  31. Inspect, plan and ensure that all materials and equipment are in complete readiness for service; rectify deficiencies with respective personnel

  32. Answer outlet’s phone within 3 rings, using correct salutation and telephone etiquette

  33. Greet guest and take guests’ food and beverage orders, utilizing suggestive selling techniques and following all departmental standards

  34. Anticipate guests’ needs, respond promptly and acknowledge all guests, even when it is busy

  35. Maintain positive guest relations

  36. Be familiar with all hotel services/features and local attractions/activities to respond accurately to any guest inquiry

  37. Handle guest complaints by following the instant pacification procedures and ensuring guest satisfaction

  38. Access all functions of micros system in accordance to specifications. Restock journal tape and change ribbons as needed

  39. Ensure that all drink orders from servers are accurately rung into the Micros system before giving drinks to them

  40. Legibly document orders when system is down and distribute orders to servers; ensure authorization for room charge. Obtain manual checks and follow all Accounting procedures.

  41. Process all payment methods in accordance with Accounting procedures and policies

  42. Accommodate guest requests for change courteously

Maintain cleanliness, sanitation and condition of bar, guest and service area; following procedures laid down in departmental standards

  1. Ensure all drink orders for guest according to outlet recipes

  2. Provide club service for designated beverages

  3. Serve drinks to guests

  4. Retrieve food orders from kitchen and serve to guests

  5. Open and serve wine/champagne

  6. Prepare and serve cappuccino and espresso.

  7. Monitor and maintain cleanliness and organization of bar-top, tables, service area and outlet itself.

  8. Replace ashtrays with 1 or more butts with clean ashtray by using capping method

  9. Remove soiled wares from bar-top and tables to dishwashing area

  10. Complete designated closing reports in the Micros system

  11. Pay out tips to designated staff and document such, following Accounting and legal requirements

  12. Count bank at end of shift and secure bank

  13. Legibly complete designated cashier reports and distribute in accordance with Accounting procedures

  14. Balance and drop receipts according to Accounting specifications

  15. Extend courteous departure when guests leave outlet

  16. Close all guest checks in the micros system immediately upon payment

  17. Clean glassware in glass machine/ three compartment sink

  18. Assist servers/Lobby hostess in their job functions to ensure smooth and efficient service to guest

  19. Clearly communicate last call at designated closing time to guest and Lobby hostess

  20. Legibly complete bottle transfer slips and distribute accurately

  21. Legible document designated items on the spill sheet

  22. Ensure maximum usage of all supplies to attain budgeted beverage cost and to prevent waste

  23. Use all chemicals in accordance with hotel regulations and requirements

  24. Count all empty bottles by type and legible document such on the requisition form; attach transfer slips/spill report and place in manager’s office

  25. Successfully completion of the training / certification process

  26. Foster and promote a cooperative working climate, maximizing productivity and employee morale

  27. Assist servers with expediting problem payments. Ensure all cashiering procedures are processed in compliance with Accounting standards

  28. Legibly document pertinent information in outlet log book

  29. Complete all closing reports in the POS system

  30. Complete all paperwork and closing duties in accordance with departmental standards

  31. Return outlet keys at end of shift to security

Experience

  • Has worked in a bar before in a 5 star hotel / resort

Education

  • High school graduate, some college.

Required Skills

  • Minimum 21 years of age to serve alcoholic beverages

  • Food handling certificate.

  • Knowledge of various drinks recipes and beverage service standards.

  • Ability to satisfactorily communicate in English with guests, management and co-workers to their understanding.

  • Ability to provide legible communication.

  • Ability to compute basic mathematical calculations.

  • College degree

  • Ability to communicate in a second language, preferably Arabic.

  • Certification of previous training in liquor, wine and food service.

  • Any previous culinary training.

  • Ability to enforce hotel’s standards, policies and procedures with assigned staff

  • Ability to be well organized, maintain concentrating and think clearly when providing service to the guests within any given period of time

  • Ability to access and input information into Micros system.

  • Ability to maintain good coordination while serving orders quickly

  • Ability to be a clear thinker, analyze and resolve problems exercising good judgment

  • Ability to focus attention to details

  • Ability to prioritize and organize work assignments; delegate work.

  • Ability to direct performance of assigned staff and follow-up with corrections where needed.

  • Ability to motivate assigned staff and maintain a cohesive team

  • Ability to ascertain staff training needs and provide such training

  • Ability to suggestively sell menu items, beverages and wines

  • Ability to exert physical effort in transporting trays from service area to guest

  • Ability to exert physical effort in transporting food and beverage to guest

  • Ability to exert physical effort in transporting equipment and wares
