Position Summary: A Cost Controller Supervisor at St. Pancras Renaissance Hotel will assist Finance & Operational Departments in the monitoring, reporting, and controlling of F&B cost of sales in the Hotel. Ensuring that all measures, targets, and standards are achieved to the highest audit and operational standards in a professional and efficient manner. Responsible for managing the Cellar team directly, maintaining finance records, carrying out administrative duties related to finance, and working closely with the Goods Receiving and Food Buying teams.

F&B Cost Control

  • Assist Department Managers in all aspects of purchasing (e.g., Food, Beverage and Controllable) to ensure quality and profitability.

  • Assist Department Managers in maintaining or reducing cost of sales margins to target

  • Delegates and enforces first in/first out inventory rotation for all storeroom products.

  • Ensures that proper safeguards are in effect for the security of the food and beverage storeroom assets.

  • Enforces item use-up and par stock levels with storeroom personnel, F&B and Kitchen management to keep inventory at lowest level possible levels.

Accounts Payable

  • Process invoices for suppliers in a timely manner to ensure payment in a timely manner

  • Reconcile purchase log monthly and post month end accruals in a timely manner, before P&L reviews at month end

  • Ensure all processed invoices are imaged in appropriate systems at least weekly

  • Ensure completion of month end task list

  • Liaise with suppliers regarding payment due, where necessary

Financial & Account Management

  • Prepare, review and maintain reconciliations of assigned balance sheet accounts to prove that figures are correct and further ensuring that all reconciliations are kept current.

  • Maintains a strong accounting & operational control environment which improves operations and profitability and manages business risks. Ensures compliance with standard and local operating procedures (SOPs and LSOPs).

  • Advises the Director of Finance/Assistant Director of Finance on existing and evolving operating/financial issues.

  • Communicates financial concepts in a clear and persuasive manner that is easy to understand and drives desired behaviours.

  • Leverage’s technology and effectively uses information systems and tools to generate financial reports and provide managers with analytical support to drive decision-making.

Human Resources

  • Assigns team members and other department managers clear accountability to accomplish goals.

  • Ensures direct report associates participate in the department’s orientation program and receive the appropriate training to successfully perform their job. Ensures team members are cross-trained to support successful daily operations.

  • Assists Management in setting goals and expectations for direct reports using the performance appraisal process and holds staff accountable for successful performance; coaches team by providing specific feedback to improve performance.

General Duties

  • Assisting the office with general day to day guest & internal queries.

  • Participating in morning meetings, 15 minute training sessions, departmental meetings and any other selected committees.

  • Maintain appropriate standards of conduct, dress/uniforms, and hygiene.

  • Communicate with all departmental managers and associates in professional and supportive manner.

  • Maintain a positive attitude to work duties and colleagues at all times.

Qualifications:

  • Five GCSE or equivalent qualifications including Math’s and English, Accounting / Finance or Hospitality qualification preferred. OR

  • Equivalent combination of education and experience.

Skills And Knowledge :

  • Timeliness and accuracy in recording and reporting

  • Ability to verbally communicate effectively with clients, suppliers and co-workers.

  • Flexible hours, (Weekend work may apply during month end / yearend/ late shifts may be require to check floats)

  • Ability to follow procedures and LSOPs closely

  • Security and safety in work habits
