Job Description

The perfect job for the person that wants to lead and engage 400+ colleagues & leaders, manage over 35m in revenue and help over 1,000,000 guests turn moments into memories. Reporting to the Director of Food & Beverage, this position is responsible for all areas of Food and Beverage. This includes the overall growth in guest satisfaction, colleague satisfaction and shareholder return.  The successful applicant must continue to improve service levels that add to the Chateau’s reputation as a recognized Food and Beverage destination.   The successful candidate will be a ‘hands on’ leader and coach to all leaders and colleagues. 

Summary of Responsibilities:

  • Directly responsible for the following areas in regards to guest satisfaction, employee engagement, shareholder return, and Health and Safety; five outlets, a coffee shop, and In Room Dining, and a large banquet operation.

  • Ensure all outlets are compliant with Fairmont Hotels & Resorts Food & Beverage service standards

  • Development, implementation and follow-up of various food and beverage projects such as point of sale systems, annual F&B goals and renovations

  • Lead F&B outlets in the development of specific action plans to address areas of improvement identified in the hotel's employee engagement survey, guest satisfaction reports and monthly P&L statements

  • Continuously analyze the Food and Beverage operations to develop and implement new proposals positively affecting revenues, expenses, productivity and efficiencies.

  • Assist in the annual planning of the F&B budget, implementation and regular monitoring 

  • Recruit outlet managers and support in recruitment of all Food & Beverage leaders

  • Oversee the opening and closing of seasonal outlets

  • Analyze food and beverage business trends to develop accurate forecasts, closure plans, recruitment plans and strategies to maximize profits

  • Guide and develop outlets managers while executing individual(s) succession plans

  • Work with managers to ensure that the weekly forecast is completed accurately and in a timely fashion

  • Working with food & beverage leaders, oversee the continuous review and updating of service training and leadership development

  • Work together with the Executive Chef on all areas pertaining to menus and food service

  • Develop menus, promotions and standards for all food and beverage operations.

  • Responsible for attaining beverage cost of sales goals by oversee ordering, inventories and beverage controls for the entire division as well as maintain the development of the hotel’s wine collection

  • Be an active member of the F&B operation committee meetings; be an active member in the hotel leadership group meetings

  • Liaise with all departments to ensure that there is clear communication and understanding between the departments and restaurants (Accounting, Front Office, Colleague services, Guest Services, etc)

  • Point of sale system (Silverware) management at the “Champion” level

  • Ensuring heart and front of the house are clean and well maintained - maintain effective preventative maintenance program for all restaurants

  • Represent the outlets in pre-convention meetings and build relationships with groups to ensure maximum capture in the outlets

  • Be an ambassador of the community and participate in local events

  • Maintain a strong relationship with suppliers and negotiate the best possible prices

  • Conduct regular research of direct competition

  • Develop detailed design briefs for capital projects

  • Other duties as assigned

Qualifications

  • Minimum of 3 years F&B management experience in a department head level position an asset

  • Excellent knowledge of food and beverage products, marketplace trends and service standards essential

  • Computer literacy required in POS systems, Word, Excel, Outlook, and Internet usage

  • Strong organizational and administrative skills

  • Hotel and Restaurant Management Diploma/Degree an asset

  • Sommelier certification an asset

  • Experience in banquet and event planning an asset

  • Experience in culinary and stewarding an asset

  • Strong interpersonal and problem solving abilities

  • Highly responsible & reliable

  • Ability to work well under pressure in a fast paced environment

  • Ability to work cohesively as part of a team

  • Ability to focus attention on guest needs, remaining calm and courteous at all times
