Kenmore Tonawanda UFSD Cook Manager FT - 10 mos - Kenmore West High School in Buffalo, New York

Hours: 6:15 a.m. – 1:45 p.m. (7 hours per day, 35 hours per week) - 10 Month Duty Schedule

Required Knowledge, Skills & Abilities: Good Knowledge of approved methods of food preparation; some knowledge of nutritional values of foods; ability to supervise the work of others; ability to keep simple records and submit reports; ability to get along well with children and adults; ability to understand and carry out oral and written directions; resourcefulness; physical condition commensurate with the demands of the position. Assume all responsibility for the daily operation of a school building cafeteria in accordance with the policies of the Kenmore-Town of Tonawanda School District. Responsible for food preparation, maintaining the highest standards of good nutrition with eye appeal, good taste and adequate amounts in all lunch periods for each days' service and must be capable of making soups and muffins from scratch. Student meals are to meet all federal/state guidelines. Maintain adequate and accurate records and controls to include: financial, personnel, inventories, operational reports and bank deposits. Control food and supply cost by stock rotation and order items on a two-week basis. Schedule employees' times for an efficient work force with specific duties that are posted. All food service helper jobs are to be rotated. Instruct and supervise employees on the job regarding the correct use and maintenance of equipment, including scheduling its use for efficiency and economy. Use accepted standards in food preparation, quality recipes, portion control, etc. Must have knowledge of mathematic conversion with the ability to increase or decrease recipes. Use standards in sanitation and safety. Create a desirable atmosphere in the school cafeteria for pupils and faculty. Be a willing participant to the workshops and seminars for personal growth. Cooperate with the Director of Food Services when special duties are assigned.

Minimum Qualifications:

A) Graduation from a regionally accredited or New York State registered college or university with an Associate's Degree in Food Service Management or a related field and one (1) year experience in the preparatio n of food on a large scale; or:

B) Graduation from high school or possession of a high school equivalency diploma and two (2) years of experience in the preparation of food on a large scale; or:

C) A n equivalent combination of training and experience as defined by the limits of (A), and (B). Note: Verifiable part-time and/or volunteer experience will be prorated toward meeting full-time experience requirements.

Special Qualifications: Must be Serve Safe Certified. Also, must have knowledge of health, sanitation and safety requirements; must be able to create an atmosphere in the school kitchen that inspires fellow employees to be willing to work.
