What You Will Do

  • Assists with the direction and oversight of sushi preparations

  • Follow pre established recipes to ensure consistent quality and presentation techniques

  • Supports and carries out the correct procedure of preparation, presentation and portion control for all raw and cooked foods in accordance with the menu with adequate pars required for efficient service

  • Supports all sushi kitchen areas to ensure a consistent, high quality product is produced- daily line checks and quality control

  • May cut and prepare fish

  • Ensures that all equipment and facilities are in good working order and is properly maintained

  • Responsible for ordering products to ensure all par levels are maintained

  • Ensure work area is in compliance with health codes at all times

Desired Qualifications:

  • Has three (3) or more years of experience in a supervisory role in a sushi kitchen; Head Sushi Chef or Sous Chef preferred

  • Proven experience with a variety of sushi rolling, plating, and related cooking techniques

  • Excellent knife skills and proficiency in various sushi techniques, such as cutting, slicing, rolling, and shaping sushi

  • Must be able to obtain all work cards

  • Must be able to work in the United States without sponsorship

  • Must have strong leadership skills and the ability to mentor and energize a diverse team of culinary professionals

  • Must have an exceptional hospitality driven attitude

  • Proven Leadership and training skills

  • Dedicated and willing to go above and beyond

  • Must be able to work in a fast- paced, guest service driven environment

  • Supports an environment of team member growth and development

  • Clear concise written and verbal communication skills
