Deepna Inc., DBA Acitron Cocina Mexicana - has an opening for a full-time Chef and Head Cook. The role entails: Oversee the preparation of a diverse array of Mexican dishes, such as Mole Poblano, Chiles en Nogada, Pollo con salsa, and Carne Estofada. Demonstrate ability in using traditional Mexican cooking tools like metate, mortar, pestle, and grinding stones. Possess broad knowledge of corn and its culinary techniques (pre and post-Hispanic). Demonstrate ability in the nixtamalization process. Skillfully pair different Mexican spirits, such as Sotol, Pulque, Mezcal, Bacanora, and Tequila, with particular dishes. Supervise kitchen staff and ensure the quality of raw or cooked food items meets standards. Identify and demonstrate new cooking techniques and authentic Mexican cuisine methods to staff. Develop unique and appropriate recipes or menus, considering ingredients and customer needs. Train, instruct, assist, and direct cooks and bartenders, and catering staff in food preparation, cooking, garnishing, or presentation. Organize the team for private events. Ensure daily cleaning and maintenance of workstations and surrounding areas to meet health code regulations. Stay updated on developing trends in the restaurant industry. 2 years of Chef and Head Cook or related experience and a High School diploma are required.
